从小热衷于烹饪的Federico来自意大利的朱萨诺,喜爱美食的他从小和母亲学习制作托斯卡纳风味传统美食。长大后他选择就读烹饪学校,在风景如画的意大利莱科湖边的米其林餐厅Pierino Penati Ristorante开始了料理生涯。

随后的30年职业生涯中他的美食足迹覆盖了包括丹麦、阿联酋、阿塞拜疆等。曾任命于著名的卓美亚阿提哈德酒店及阿布扎比皇宫酒店。之后他来到了中国上海开启全新旅程,曾掌勺Isola及VA BENE意大利餐厅。

Federico坚持选用最新鲜的食材,在保留传统菜肴本味的同时赋予不失层次的丰富口感,为食客们带来不同寻常的味觉体验。“我不停在家乡寻找新鲜的食材作为原料”,Federico说道。“意大利是一个食材丰富多样的国家,天赐的美食让我更珍惜、更认真地对待我的每个作品,因为我想用我的专业、特长和技巧把这个美丽半岛上最好的都带给大家。”

“我非常推荐大家品尝意式奶油烩饭配手工香肠、香炸鳕鱼以及特色提拉米苏,”Federico说道。“这些菜品的原料均来自于我的家乡”,他补充道。

关于帕戈意大利餐厅

荣获2019及2020上海米其林餐盘奖的帕戈意大利餐厅提供地道意大利家庭式美食。拥有开放式的餐厅布局,轻松随意的服务风格,加上一堵绘有马可波罗奇遇记的彩色墙面和色彩斑斓的玻璃天堂鸟,给人以温暖而生气勃勃的感觉。餐厅布置低调而时尚,餐厅内设有舒适的彩色软座,四周是明亮柔和的海景墙饰并拥有可容纳20人的透明包厢,是举行小型活动及聚餐的理想之地。

The Westin Bund Center Shanghai relaunches Prego, its multi award-winning Italian restaurant with the new Chef Federico Parravicini and his style of Italian cuisine.

Originally from Giussano, Italy, Federico is a fan of cooking, since he is a child he was looking forward to help preparing dinner for the family, at that time Federico learned more culinary secrets from Tuscany where his mother originates from. When he came to the age, he chose to go to the culinary school. In Pierino Penati Ristorante, a one star Michelin restaurant near Lecco Lake he begin his culinary career and become a Sous Chef later.

In Federico 30 years career journey, his culinary footprint spread across Denmark, Azerbaijan and the United Arab Emirates where he worked in two most prestigious hotels, Jumeirah at Etihad Towers and Emirates Palace. After spending two years in Europe, he again decided to try a new adventure in Shanghai, where he took charge of Isola and VA BENE restaurant.

Chef Federico presents only the freshest, most authentic dishes that are strikingly simple yet complex in flavors. “I am constantly looking for ingredients from my motherland,” he said. “Italy is a country with a wide variety of biodiversity and it is this that I like to present respectfully on a plate. In the kitchen, I use culinary styles, specialties and techniques from all corners of the Italian peninsula.”

“I also recommend trying “Carnaroli” Risotto and homemade sausage; the deep fried cod; and the freshly made tiramisu,” says Chef Federico. “The ingredients are from where I am from.” he added.

The MICHELIN Plate awarded restaurant Prego features homestyle Italian favorites. The restaurant’s open, yet warm and spacious ambience is complemented by friendly and attentive staff making Prego a great place to enjoy a relaxed and authentic Italian lunch or dinner. The open kitchen and counter seating provide a bustling backdrop to the restaurant’s more refined option of Bellisimo, its private room available for up to 20 diners.
